MY STORY

My cuisine is cosmopolitan in spirit, influenced by Scandinavian purity and the finesse of Asian gastronomy. At its heart lies a deep respect for the natural essence of every ingredient.

 

A subtle touch of acidity or a refined hint of spice often defines my signature elegant, balanced, and unmistakably my own.

Born in Austria and professionally shaped in the Netherlands, my culinary journey has been defined by dedication, precision, and an international perspective. In 2002, I opened my restaurant De Leest*** in Vaassen a place where a lifelong ambition became reality with the achievement of three Michelin stars.

 

After more than two decades at the highest level of gastronomy, it felt natural to explore new horizons and allow creativity to evolve in new directions.
